Ingredients

Al Pastor Sauce

  • 570 g water, hot
  • 1 dried ancho chilli, deseeded, destemmed
  • 2 dried guajillo chillies, deseeded, destemmed
  • 2 dried chipotle chillies, deseeded, destemmed
  • 45 g achiote paste
  • 115 g white onions, quartered
  • 2 garlic cloves
  • 200 g fresh pineapple chunks, cut into pieces (2.5 cm/1 in.)
  • 30 g cider vinegar
  • 70 g freshly squeezed orange juice
  • 30 g extra virgin olive oil
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • 1 pinch ground cloves
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 910 g cauliflower florets (approx. 1 head)

Pineapple Salsa

  • 20 sprigs cilantro, fresh, leaves only
  • 115 g fresh pineapple chunks, cut into pieces (12 mm/½ in.), plus extra to garnish
  • 115 g white onions, in pieces

Cauliflower Filling

  • 1 - 2 tbsp extra virgin olive oil
  • 20 corn tortillas (15 cm/6 in.), warmed
