Ingredients

  • 1 head cauliflower, large (approx. 36 oz), leaves removed
    or 2 heads cauliflower (approx. 36 oz total), leaves removed
  • 1 tbsp sweet smoked paprika
  • ½ tsp turmeric powder
  • ½ tsp garlic powder
  • 1 tsp dried ground cumin
  • 1 tsp onion powder
  • 1 tsp curry powder
  • 3 oz extra virgin olive oil

Sauce

  • 20 sprigs fresh parsley, leaves only
  • 2 garlic cloves
  • 1 lemon, thin peel only, no pith, plus 1 oz juice
  • 2 oz extra virgin olive oil
  • ¾ tsp salt, to taste

Cauliflower Purée

  • 2 oz tahini
  • 1 oz extra virgin olive oil
  • 2 lemons, 1 juiced and 1 sliced to garnish
  • 2 tsp smoked paprika
  • 2 oz water, plus extra if needed
  • ½ tsp salt, to taste
