Ingredients

Tofu mayonnaise

  • 60 g extra virgin olive oil
  • 1 garlic clove
  • 2 sprigs fresh flat-leaf parsley, leaves only
  • 150 g silken tofu
  • 20 g lemon juice (approx. ½ lemon)
  • 2 tsp miso paste
  • ½ tsp English mustard
  • 1 pinch ground black pepper

Broccoli bites

  • 500 g water
  • 250 - 300 g broccoli florets
  • 100 g cheddar cheese, cut into pieces (2 cm)
  • 40 g brown onion (approx. ¼ onion)
  • 1 garlic clove
  • 2 sprigs fresh flat-leaf parsley, leaves only
  • 2 tsp macadamia oil
  • 80 g wholemeal breadcrumbs (see Tips)
  • 1 tsp Dijon mustard
  • 1 egg
  • 1 tsp salt
  • 1 pinch ground black pepper
