  • 2 nectarines, under ripe, diced (¼ in.)
  • 10 sprigs cilantro, chopped

Salsa

  • 2 oz white onion
  • 1 garlic clove
  • 1 oz extra virgin olive oil
  • 1 oz feshly squeezed lime juice
    or 1 oz freshly squeezed lemon juice
  • ½ tsp rice vinegar
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper, to taste
  • 1 lemon, juice only, to serve
