  • 2 ½ oz red pepper

  • 9 oz vegetable oil
  • 1 oz ginger, peeled, in pieces
  • 1 oz cilantro leaves, plus extra to garnish
  • 1 large egg
  • 1 tbsp freshly squeezed lemon juice
  • ½ tsp salt
  • 1 pinch ground black pepper

  • 2 oz leeks, cleaned and sliced (2 in.)

  • ½ tsp salt
  • 3 large eggs
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 4 oz mushrooms, sliced
  • 2 - 4 tbsp oil, as needed
