  • 6 oz dried figs (e.g. Calimyrna or Smyrna), destemmed, halved, plus extra to serve
  • 4 oz yellow onions, in pieces
  • 2 oz carrots, in pieces
  • 2 garlic cloves
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 28 oz beef short ribs, flanken cut, Korean-style, cut into pieces (3 in.), (see Tip)
  • 3 oz red wine
  • 12 oz beef stock
  • 10 oz crushed tomatoes
  • 3 tbsp all-purpose flour
  • 1 tsp salt, to taste
  • ¼ tsp ground black pepper
  • 1 star anise
  • 3 - 4 mini red bell peppers, destemmed, deseeded, sliced (½ in.), to serve
  • precooked couscous, to serve
