  • 4 ½ oz yellow onions, quartered
  • 1 oz extra virgin olive oil
  • 1 tsp salt, to taste
  • ½ tsp ground black pepper, to taste
  • 3 dried bay leaves
  • 32 oz chicken stock
  • 4 tsp chicken stock paste
  • 8 oz vegetable oil
  • 6 oz all-purpose flour
  • 16 oz chicken thighs, boneless and skinless, halved
  • 8 oz Andouille sausage, sliced in rounds (1 in.)
  • 16 oz large shrimp, raw, peeled, deveined, halved
  • 3 green onions, sliced, to serve
