Ingredients

  • 63 oz water, divided, plus extra, to rinse and soak
  • 8 oz dried red beans
  • 4 garlic cloves
  • 1 oz extra virgin olive oil
  • 12 oz yellow onions, quartered
  • 4 oz green bell pepper, cored and quartered
  • 4 oz celery sticks, cut into pieces (2 in.)
  • 8 oz bacon, cut into pieces (¼ in.)
  • 4 oz salt pork, cut into pieces (¼ in.)
  • 2 tsp ground smoked paprika
  • ½ - 1 tsp ground cayenne pepper
  • 2 tsp Cajun spice mix
  • 1 tsp dried sage
  • 4 sprigs fresh thyme, leaves only
  • 3 dried bay leaves
  • 6 oz Andouille sausage, fully cooked, sliced on the diagonal (½ in.)
